Apple Country Bread:

This comes from www.nyapplecountry.com. I like it even better than the apple walnut bread because it makes larger loaves and the dried cherries are a really nice addition. I've made it with dried cranberries too, but the cherries are better.

2 cups apples, pared and chopped
1 cup sugar
1/2 cup shortening
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped nuts
1/3 cup dried cherries

Topping
1 Tbsp sugar
1/4 tsp cinnamon

Heat oven to 350. Grease and flour 9x5x3 loaf pan.

Mix sugar, shortening, eggs and vanilla. Stir in flour, baking powder, baking soda and salt until smooth. Stir in apples, dried cherries and nuts. Spread in pan. Mix sugar and cinnamon and spinkle over batter. Bake until wooden pick inserted in center comes out clean (50 to 60 minutes.)

Immediately remove from pan. Cool completely before slicing. Store tightly covered.
