Banana Chocolate Chip Bars: 2 3/4 c all purp flour
1 1/4 c sugar
1 1/4 c (2 large) bananas
3/4 c butter
2 eggs
1 1/4 tsp EACH baking powder and baking soda
1/2 tsp salt
2 tsp vanilla
1/2 c chocolate chips
Preheat oven to 350.
Grease 15x10" jelly roll pan.
In mixer bowl, combine all bar ingredients except chocolate chips. Beat at low speed, scraping sies of bowl often until well mixed (2-3 min). Stir in chocolate chips. Spread into prepared pan.
Bake near center of oven for 25 to 30 min or until wooden pick comes out clean. Cool completely. Cut into bars.
These can be frosted before cutting.
4 c confectioners sugar
1/2 c butter
1/4 c milk
2 tsp vanilla
Combine all frosting ingredients in mixer bowl. Beat at medium speed scraping sides of bowl often until light and fluffy. If desired, sprinkle frosted bars with shaved chocolate.
