Caramel Chocolate Pecan Bars:


This is a Bridge Deck favorite!

Crumb mixture:
2 c all-purpose flour
1 c firmly packed brown sugar
1/2 c butter

1 c pecan halves

Filling:
2/3 c butter (I think it comes to 10-2/3 Tbs)
1/2 c firmly packed brown sugar

1/2 c butterscotch pieces
1/2 c semi-sweet chocolate pieces

Preheat oven to 350

Combine all crumb mixture ingredients. Beat at low speed, scraping sides of bowl often until particles are fine (1 to 2 min.) Press into ungreased 13 x 9 baking pan. Sprinkle pecans evenly over unbaked crumb mixture.

Prepare filling: Combine butter and brown sugar in sauce pan. Cook over medium heat stirring constantly until mixture boils all over the top (4 to 5 min.) Boil 30 sec to 1 min more, stirring constantly. (Don't overdo it or the caramel gets too thick to spread right.)

Pour fillling evenly over pecans and crumb mixture. Bake near center of 350 oven for 18 to 20 minutes or until entire filling is bubbly. Remove from oven and immediately sprinkle with butterscotch and chocolate pieces (I use chips). Allow pieces to melt slightly (2 to 5 min) then slightly swirl pieces. Leave some whole -- Ideally it will have a marbled look.

Cool completely and cut into bars.
