Date Nut Bread:


Many thanks to Marie McIntyre for this easy and delicious recipe. You can make either 6 small or 3 large loaves. Marie recommends mixing the batter by hand in a large bowl. I use a mixer, but try not to overbeat. This bread freezes extremely well.

Preheat oven to 350. Grease and flour loaf pans.

1 lb pitted dates
4 tsp baking soda
4 c boiling water
4 sticks margarine (I use butter)
4 eggs
4 c sugar
6 c flour
2 c chopped walnuts
4 t vanilla

Cut up dates, sprinkle them with baking soda and pour boiling water over all. Add margarine and cool.

Add sugar, eggs, flour, vanilla and nuts. Mix.

Pour into loaf pans and bake for 1 hour.
