Double Crunch Granola Bars:
This recipe comes from the Quaker Oats website. I double the recipe and put it in a large jelly roll pan. I line the pan with foil, grease it well with pam. Once the bars are cool, I turn the whole thing over onto a cutting board and peel off the foil. I've added chocolate chips or raisins on occasion.
4 cups Quick Quaker Oats (uncooked) or 4-1/2 cups Old Fashioned (I use the latter)
1-1/2 cups chopped nuts (I use almonds, pecans and walnuts, mixed)
1 cup firmly packed brown sugar
3/4 cup melted butter
1/2 cup honey or corn syrup
1 tsp vanilla
1/2 tsp salt (optional)
Preheat oven to 350 deg.
Combine all ingredients; mix well. Press firmly into well greased 15-1/2 x 10-1/2 inch jelly roll pan. Bake 10 to 12 minutes or until golden brown and bubbly.
Cool thoroughly and cut into bars.
