Honey Nut Chess Bars:
This is a Bridge Deck favorite! Easy too. I know from experience that the recipe can be doubled, even quadrupled! Bake in separate pans, though.

Crumb Mixture
1 1/4 c all purpose flour
1/3 c sugar
1/2 c sweet butter, softened
1/4 c chopped pecans

Filling
1 c firmly packed brown sugar
1/2 c chopped pecans
1/2 c sweet butter, melted (or very soft)
2 eggs
2 Tbs honey


Preheat oven to 350.

In mixer, combine all crumb ingredients except pecans. Beat at low speed, scraping sides of bowl often, until mixture is crumbly (1-2 min.) Stir in pecans. Press into ungrased 9" sq baking pan (I use a 9 x 13 pyrex and it works fine.) Bake near center of oven for 15 to 20 minutes or until edges are lightly browned.

Meanwhile, in same mixer bowl, combine all filling ingredients. Beat at low speed, scraping sides of bowl often, until well mixed (1-2 min). Pour over hot crust. Return pan to oven and continue baking 25 to 30 minutes, or until wooden pick inserted in center comes out clean. Cool completely and cut into bars. (I use a pizza wheel to cut them.)
