Orange Date Bars: 8 oz chopped dates
3/4 c sugar
1/2 c sweet butter
1/2 c water
1 1/4 c all purp. flour
1 c chopped pecans
3/4 c milk
1/4 c orange juice
2 eggs
3/4 tsp baking soda
1/2 tsp salt
1 Tbsp grated orange peel
Preheat oven 350.
Grease 15 x 10" jelly roll pan.
Combine dates, sugar, butter and water in sauce pan. Cook over low heat, stirring until dates soften (5 to 8 min.) Remove from heat.
Add remaining bar ingredients. Stir until well mixed. Spread into greased pan. Bake near center of 350 oven for 15 to 20 minutes or until woodenpick inserted in center comes out clean. Cool completely. Cut into bars.
If you want, you can frost bars before cutting. I don't because it makes them a bit messy and I think it's too sweet, but here's the frosting:
3 c confectioners sugar
1/3 c butter softened
3 Tbsp mlk
1 Tbsp grated orange peel
Combine all ingredients in mixer. Beat at medium speed until light and fluffy.
