Zucchini Chocolate Chip Cake:


This is a great cake! You can make it without the cocoa, but add more flour to compensate. The chips and nuts tend to sink and I haven't figured out how to prevent that, but it's still wonderful. Don't leave out the orange rind. Many thanks to my sister-in-law's mother, Anne MacLachlan for this fabulous recipe.

2-1/2 cups unbleached flour
1/2 cup unsweetened cocoa powder
2-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3/4 c butter or margarine, softened
2 c sugar
3 eggs
2 c coarsely chopped zucchini
1 pkg (12 oz) semisweet chocolate chips
1 c chopped walnuts (optional)
1/2 c milk
2 tsp vanilla
2 tsp grated orange rind

In a medium bowl, sift the flour, cocoa, baking powder, baking soda, cinnamon and salt.

In large bowl, cream the butter and sugar, then beat in eggs one at a time. Stir in the zucchini, chocolate chips, walnuts, milk, vanilla and orange rind. Add the dry ingredients and blend well.

Pour into greased 10" bundt or angel food cake pan and bake in preheated 350 oven for 1 hour or until a toothpick inserted in the center comes out clean.

Serves 20 to 24.
